For the following canned items, organic and PBA-free canned items are best.
Blend the following ingredients in a food processor:
2 cloves fresh garlic
2-3 cups of basil (or other herbs - cilantro, parsley, mint)
1/2 cup pine nuts
Add the following and blend again.
1/4 cup extra vigrin olive oil (extra can be used for consistency, as needed)
juice of 1/2 to a full lime 1/4 tsp lime zest (optional)
salt to taste (about 1 tsp)
Store in refrigerator for an hour to enhnace flavor.
1 can organic chickpeas
1 can black olives, sliced
1 can artichoke hearts, sliced
1-2 handfuls of grape tomatoes, sliced if large
1/2 red bell pepper, diced
2 tbsp hemp seeds
1 avacado, cubed right before serving
Mix ingredients and pesto in a medium bowl. Store in fridge till ready to serve. Enjoy!
