Asian Primal Slaw


Ingredients

Slaw:

2 cups shredded green cabbage

2 cups shredded red cabbage

2 cups julienned carrots (approx. 2 large carrots)

1/2 cup finely chopped fresh cilantro

2 green onions, thinly sliced (approx. 1/4 cup)

1/4 cup hemp seeds

1 tablespoon red chili flakes (optional)*

1 teaspoon salt

slivered almonds, optional (as garnish)


Dressing: Make this to taste! I combined ingredients from 2 recipes for this and didn't accurately calculate. 

For ingredients with a range, start with 1 tbsp/ 1 tsp then add more as desired. All of these flavors mix well!

1/4 cup creamy almond butter 

1-3 tbsp toasted sesame oil AND/OR 1-3 tbsp coconut aminos 

1-4 tsp fresh ginger, grated

1/4 cup raw honey (can use stevia and less honey or elimate if letting go of sugar)

1 tbsp fresh lime juice

1-2 tablespoons apple cider vinegar

1-3 tsp ume(boshi) plum vinegar (or rice vinegar)

 1 garlic clove, minced

Directions

1) In a medium bowl, combine ingredients for dressing. Whisk well to combine.

2) In a large bowl, combine cabbage, carrots and cilantro. Toss to combine.

3) Pour dressing over cabbage mixture and toss well to combine. Refrigerate for at least one hour to allow dressing flavours to soak into the slaw.

4) Sprinkle with slivered almonds, hemp seeds, and green onion before serving.
